What does the day look like?
About 25% of the day is on the factory floor: watching line operators, checking CCP and oPRP points, inspecting sanitation, auditing allergen cross-contact and glass/brittle plastic risks, and taking ATP swabs from contact surfaces. You may use a calibrated thermometer such as Testo 108, Hygiena EnSURE Touch or 3M Clean-Trace, Mettler Toledo Safeline or Loma Systems metal detectors, pH meters, and refractometers.
The other 75% is paperwork and screen work: reviewing temperature logs, pasteurisation recorder charts, metal detection logs, and sanitation check sheets; handling CCP deviations with corrective actions, product holds or quarantines, and 5-Why or Fishbone root-cause analysis; writing SOPs, flow diagrams, and hazard analysis matrices. Software can include Safefood 360, Formiti, SafetyCulture/iAuditor, SAP S/4HANA Quality Management, and Microsoft Excel. Shifts follow manufacturing schedules: morning, afternoon, and occasional night shifts during deep sanitation. Work can mean 2 to 4 degrees Celsius chill rooms, hot processing rooms, wet washdown areas, and on-call response when a CCP failure or metal detector rejection fault happens.
