What does the day look like?
The day starts with samples: receiving raw material, in-line process, or finished batch samples, cataloguing them, homogenising them, and preparing them for tests. Routine work includes pH, water activity (aw), Brix, titratable acidity, moisture, salt concentration, and colourimetry. Tools include Mettler Toledo or Hanna Instruments pH meters, Atago refractometers, Novasina or Meter Aqualab meters, 0.1 mg analytical balances, moisture analysers, spectrophotometers, incubators, autoclaves, laminar flow biological safety cabinets, and fume hoods.
A lot of the job is microbiology: sample dilution, plating on Petrifilm or petri dishes, incubation, colony counting, and Salmonella or Listeria screening. Results go into LIMS such as LabWare or LabVantage, sometimes SAP Quality Management. About 15% is the part teenagers imagine: tasting trial recipes and judging new flavours. The other 85% is sample prep, pipetting, washing glassware, sterilising equipment, plating bacteria, calibrating probes, and data entry. In 24/7 plants, shifts can be 8-hour or 12-hour rotations: 06:00 to 14:00, 14:00 to 22:00, 22:00 to 06:00, plus weekends. Contract labs such as Eurofins, SGS, and Intertek are usually 40 hours per week.
