What does the day look like?
You portion and assemble diet trays to ticket, follow the diet slip for texture and allergen flags, wash, peel, chop and weigh ingredients, reheat and hold food at specified temperatures, load and run tray lines, deliver carts to wards or dining rooms, collect returns, wash dishes and equipment, clean surfaces, fridges and floors, receive and rotate stock, label and date items, log temperatures and complete Hazard Analysis and Critical Control Points checklists. You work with temperature probes and holding cabinets, combi ovens, blast chillers, dish machines, portion scales, the hospital menu system and the patient record for meal flags.
Helping with healthy menus is a small share of the day. Most of the day is cleaning, carrying, portioning, dishwashing and checklist paperwork. Shifts are early mornings, split days, evenings, weekends and public holidays, with night work in large hospitals. You stand for the full shift in heat and steam, lift supply crates and repeat knife and packing motions. German ads explicitly require Schichtdienst including weekends and public holidays.
