What does the day look like?
The attractive part is a small part of the job: about 10% to 15% of the day is tasting new flavours, sensory panels, or benchtop formulation. The other 85% to 90% is lab testing, QA documentation, compliance paperwork, plant trials, cleaning, and calibration.
A normal lab or office schedule is 08:00 to 17:00, 38 to 40 hours per week. Tasks include formulation batch testing, shelf-life and stability testing, microbiological swab analysis for Salmonella, Listeria, and E. coli, nutritional profiling, packaging seal integrity checks, plant scale-up runs, and regulatory compliance logs. Tools include HPLC, GC-MS, spectrophotometers, automated moisture analyzers, Brookfield viscometers, water activity meters, digital refractometers, pH meters, RedJade or Compusense, LIMS, SAP PLM, and Genesis R&D Food Formulation Software. In manufacturing, pilot plants, and QA roles linked to 24/7 factories, early mornings, evenings, night shifts, and weekend rotation are common for entry-level staff.
