What does the day look like?
The usual week is 38 to 40 hours on a day shift: 08:00 to 17:00 or 09:00 to 18:00, Monday to Friday. Night shifts and on-call work are almost nonexistent in bench R&D, but pilot-plant trials can sometimes start at 06:00 to match production schedules.
A day means bench formulation: weighing ingredients on Mettler Toledo-type analytical balances accurate to 0.001 g, measuring pH with Hanna or Metrohm meters, Brix with digital optical refractometers, water activity with Novasina or Aqualab analyzers, and viscosity with Brookfield viscometers. You may run pilot-scale thermal processors, homogenisers, planetary food mixers, and vacuum sealers; prepare sensory samples with random 3-digit codes; and track samples in stability chambers at 25 degrees C, 37 degrees C, 45 degrees C, and 75% relative humidity. About 15% is creative tasting and flavor iteration. The other 85% is cleaning, calibration, pH/Aw/Brix testing, and entering batch logs into PLM/LIMS systems such as SAP S/4HANA, Siemens Opcenter RD&L, or TraceGains.
