What does the day look like?
The day is not mostly standing in a kitchen inventing recipes. A senior food R&D scientist takes a launch or reformulation brief and checks ingredients, formula, cost, margin, manufacturability, safety, and quality rules. The tools can include Microsoft Excel and Office, SAP, SQL databases, Tableau, STATISTICA or S-PLUS. In lab and pilot work, they may use HPLC, GC-MS, rheometers, texture analysers, extruders, spray dryers, and sensory panels.
The tasting and pilot-trial part a teenager imagines is a minority of the day. Most time goes into specifications, supplier and co-manufacturer work, meetings with process engineers, plant operators, flavour experts, packaging and marketing teams, costings, and compliance documents. O*NET says 59% work more than 40 hours per week, 91% use email every day, and 90% have face-to-face discussions every day. Plant trials can start early or run late around production slots, but routine night shifts are not typical for headquarters R&D roles.
