What does the day look like?
This is not a chef job in a kitchen. Your day moves between an office, laboratory, pilot plant and factory: setting R&D strategy, turning a consumer or brand brief into a product programme, designing formulations, running experiments, checking sensory and shelf-life validation, reading microbiology and analytical lab results, validating suppliers and ingredients, and taking a product through factory scale-up. Tools and facilities can include pilot plants, automated kitchens, sensory evaluation facilities, microbiology laboratories, analytical labs, AutoCAD, digital twins, robotics and AI/machine-learning tools.
The glamorous part — inventing a new flavour or product — is only 1 part of the work. Most of the day is project governance, compliance, cost and budget control, documentation, and meetings with Regulatory, Analytical, Microbiology, Supply Chain, Marketing and Sensory teams. BLS says Natural Sciences Managers work mainly in offices and laboratories, mostly full time; some work more than 40 hours per week. Australia ANZSCO 1325 reports 44 average full-time hours.
