What does the day look like?
A luxury hotel or resort Food and Beverage Manager oversees operations, profitability, compliance, and guest satisfaction across every dining outlet: all-day dining, fine dining, lobby lounge, bars, poolside venues, in-room dining, banqueting, and stewarding. The day starts with a morning briefing alongside outlet managers, head sommeliers, and the Executive Chef to review VIP arrivals, daily covers, and banquet event orders. You work directly with systems such as Oracle MICROS Simphony or Infrasys POS, Oracle Opera Cloud, Delphi.fdc, Materials Control or MarketMan for inventory, Deputy or 7shifts for rostering, and Microsoft Excel for P&L statements and cost variance models.
Only 20% to 25% of the day represents the glamorous, public-facing side: welcoming guests, overseeing wine service, and tasting dishes. The remaining 75% to 80% is back-office operational administration: calculating cost of goods sold, food and beverage pour costs, resolving staff disputes, managing HACCP hygiene logs, and auditing cellar inventory. Workweeks run between 50 and 65 hours. The schedule involves split shifts, weekend and holiday duty, late closes past 01:00 for banquet functions, and frequent on-call calls for operational emergencies.
